Our Story

The batter
knows the time.

Tawa began on a single cast-iron griddle in a Mylapore lane kitchen, where parboiled rice and whole black urad from Tamil Nadu's red-soil belt soaked overnight and ground to a batter that remembered the stone.

We don't rush fermentation. The batter sits for twenty-four hours — sometimes longer if the morning is cool — until it smells faintly sour and the surface is alive with small craters. That smell is how you know it's ready.

Every ingredient has a provenance: the urad from Vellore district, the drumstick from a Coimbatore farm, the coffee beans from a Coorg estate that's been in one family for three generations. We carry that chain of custody into every order.
